Hydroxy fatty acids are fatty acids in which the chain bears a hydroxyl group. 2-carboxy-l-threo-pentonate is soluble (in water) and a moderately acidic compound (based on its pKa). 2-carboxy-l-threo-pentonate can be found in a number of food items such as star anise, chinese chestnut, passion fruit, and persimmon, which makes 2-carboxy-l-threo-pentonate a potential biomarker for the consumption of these food products.
