These are phenolic compounds containing one anthocyanidin moiety which is O-glycosidically linked to a carbohydrate moiety at the C3-position. cyanidin-3-O-β-D-glucoside is an extremely weak basic (essentially neutral) compound (based on its pKa). cyanidin-3-O-β-D-glucoside has been detected, but not quantified in, several different foods, such as star fruits, lemon thymes, wax apples, sunburst squash (pattypan squash), and american pokeweeds. This could make cyanidin-3-O-β-D-glucoside a potential biomarker for the consumption of these foods.
