Description

Mate, also known as maté, chimarrão, or cimarrón, is a traditional South American infused drink made from the leaves of the Ilex paraguariensis plant, native to Argentina, Paraguay, and Uruguay (PMID: 29909900). It is widely consumed in these countries, as well as in Bolivia, Brazil, Chile, Syria, and Lebanon. The leaves are typically dried, chopped or ground, and soaked in hot water to make the drink. Mate has a rich, earthy flavor and aroma, with a slightly bitter taste. It is a rich source of caffeine, and a moderate source of B vitamins, vitamin C, and polyphenol antioxidants, providing various health benefits, including antioxidant and anti-inflammatory properties.
